RHBulk Hummingbird Cake Recipe
(Yields 12–15 slices)

Cake Layers
 Nonstick baking spray
 3 ¾ cups RHBulk AllPurpose Flour
 2 tsp RHBulk Ground Cinnamon
 1 tsp baking soda
 1 tsp kosher salt
 3 large eggs (room temp)
 1 ½ cups mashed overripe bananas (about 3 bananas)
 1 cup RHBulk Organic Brown Sugar (packed)
 1 cup RHBulk Superfine Caster Sugar
 1 cup vegetable oil
 2 tsp vanilla extract
 1¾ cups crushed pineapple (two 8-ounce cans, juice included)
 ¾ cup RHBulk Chopped Pecans


Frosting & Garnish
 Two 8-ounce packages of cream cheese, room temp
 1 cup (2 sticks) unsalted butter, room temp
 7 1/3 cups confectioners’ sugar
 4 tsp vanilla extract
 ¾ cup toasted pecan halves + dried pineapple rings or edible flowers

Bake It
1. Preheat oven to 350 °F. Spray three 9″ pans. Whisk flour, cinnamon, soda, and salt.
2. In another bowl, whisk eggs, bananas, both sugars, oil, and vanilla.
3. Create a well in dry mix. Pour wet ingredients, fold gently. Stir in pineapple and pecans.
4. Divide batter among pans. Bake 25–30 min or until a toothpick comes out clean. Cool
10 min in pans, then move to racks.
Frost It
1. In a mixer, beat cream cheese and butter on low. Gradually add confectioners’ sugar and
vanilla. Beat medium until smooth (≈5 min).
Assemble & Serve
1. Stack cooled layers (top-side down), smoothing frosting between each. Frost top and
sides.
2. Press pecan halves around the rim. Decorate with dried pineapple rings or edible flowers.
