Ingredients

  • 1½ cups Long Grain Brown Rice Flour
  • ½ cup Sweet Rice Flour (Mochiko)
  • ¼ cup Tapioca Starch
  • ¼ cup Potato Starch
  • 1 tsp Guar Gum
  • 1½ tsp instant yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup warm water
  • 2 eggs
  • 3 tbsp neutral oil

Instructions

  1. Whisk all dry ingredients together in a large bowl.
  2. In a separate bowl, combine warm water, eggs, and oil.
  3. Pour wet into dry and mix until a thick, smooth batter forms (GF bread dough is wetter than traditional dough — this is normal).
  4. Pour into a greased 9x5 loaf pan. Smooth the top with a wet spatula.
  5. Cover and let rise in a warm spot for 45–60 minutes until dough crowns above the pan.
  6. Bake at 375°F for 40–45 minutes until deep golden and hollow-sounding when tapped.
  7. Cool completely on a wire rack before slicing — this is key for GF bread!
